Salmon with Strawberry Balsamic Vinaigrette

Ingredients:
  • 4 salmon fillets, 4 to 5 ounces each
  • 4 ounces strawberries plus 2 extra for garnish
  • 2 tablespoons coconut oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon minced basil
  • black pepper, to taste
  • salt

Directions:

1)Purée 4 ounces of strawberries in a blender. Transfer to a bowl. Add vinegar, basil, salt and pepper. Whisk in coconut oil in a steady stream. Set aside.
2)Season salmon with salt and black pepper. Cook on a grill or bake in an oven at 350 degrees until desired doneness.
3)Drizzle vinaigrette over salmon and garnish with a half strawberry.
