Roasted Garlic and Orange marinade

Ingredients:
- 2 heads of garlic
- 1 cup orange juice
- 1/2 cup spicy mustard
- 4 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1/2 teaspoon lemon zest
- 1/4 teaspoon rosemary
- ground pepper

Directions:
1)Remove top or bottom of the garlic bulb so that the the cloves are exposed. Set in oven-safe tray (propping with a bit of aluminum foil helps) and pour one tablespoon of olive oil over the top and sprinkle with your favorite green herbs.
2)Roast in a preheated oven at 350 degrees for about 30 to 45 minutes or until the cloves are soft and jelly like. Remove from grill and allow to cool.
3)Squeeze the cloves of garlic out of the bulb into a blender. Add remaining ingredients and blend until smooth. The marinade works great with most anything.
