Quinoa & Smoked Tofu Salad

A vitamin-packed and mouthwatering way to serve the quinoa, or your favourite supergrain, whether fresh made or previously frozen. This salad is vegetarian, vegan, gluten-free and de-lish! Ingredients:
- 3 cups cooked quinoa (fluffed, not packed tightly)
- 1/4 cup lemon juice
- 3 tbsp Olive Oil
- 2 cloves of garlic, crushed
- 1/4 tsp (each) salt and pepper
- 1 package Smoked Tofu, diced
- 1 yellow pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
