Quinoa & Smoked Tofu Salad

A vitamin-packed and mouthwatering way to serve the quinoa, or your favourite supergrain, whether fresh made or previously frozen. This salad is vegetarian, vegan, gluten-free and de-lish! Ingredients:
  • 3 cups cooked quinoa (fluffed, not packed tightly)
  • 1/4 cup lemon juice
  • 3 tbsp Olive Oil
  • 2 cloves of garlic, crushed
  • 1/4 tsp (each) salt and pepper
  • 1 package Smoked Tofu, diced
  • 1 yellow pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped

  1. Whisk lemon juice, oil, garlic, salt & pepper in a bowl

  2. Add remaining ingredients and toss well to combine
