Spicy Chicken and Mango Kebabs

Ingredients:
  • 1 lb of boneless chicken
  • 2 mangos
  • 1 med or large onion (red or sweet)
  • 3-4 jalapenos
  • 1 pepper
  • 1/3 cup Extra-virgin olive oil
  • 1/2 tsp each Kosher salt & freshly ground black pepper
  • 1/4 tsp Cayenne pepper
  • 1 lime
  • 6-8 skewers
  • 1/3 cup sour cream
  • 2 Tbsp milk
  • Small handful of fresh cilantro, diced, for topping

Directions:


  1. Preheat your grill to medium-high. Mix sour cream with milk, stir very well to combine and let sit on your counter, not in direct sunlight.
  2. Cut chicken, onion and peppers into large bite sized pieces. Core and peel mangoes, and section into 1 inch cubes. Halve the jalapenos and remove stems & seeds, then halve again the other way.
  3. Place all cut ingredients in a bowl with olive oil and spices. Squeeze the lime over top and mix thoroughly but not excessively. Let sit for 10-20 minutes.
  4. Alternate ingredients on skewers, starting and ending with a piece of pepper or onion. Leave a little room at the end of each skewer for grasping.
  5. Place skewers on grill and brush lightly with a little more olive oil, or drizzle a bit over top. Cook 3-5 minutes each side - the more sides you choose to cook on means less time on each "side". Baste again after each flip.
  6. Once everything is grilled to doneness, remove from heat and let sit for a couple of minutes. Serve with rice or potatoes and top with cilantro and a drizzle of the sour cream.
