Spicy Chicken and Mango Kebabs

Ingredients:
- 1 lb of boneless chicken
- 2 mangos
- 1 med or large onion (red or sweet)
- 3-4 jalapenos
- 1 pepper
- 1/3 cup Extra-virgin olive oil
- 1/2 tsp each Kosher salt & freshly ground black pepper
- 1/4 tsp Cayenne pepper
- 1 lime
- 6-8 skewers
- 1/3 cup sour cream
- 2 Tbsp milk
- Small handful of fresh cilantro, diced, for topping

Directions:
- Preheat your grill to medium-high. Mix sour cream with milk, stir very well to combine and let sit on your counter, not in direct sunlight.
- Cut chicken, onion and peppers into large bite sized pieces. Core and peel mangoes, and section into 1 inch cubes. Halve the jalapenos and remove stems & seeds, then halve again the other way.
- Place all cut ingredients in a bowl with olive oil and spices. Squeeze the lime over top and mix thoroughly but not excessively. Let sit for 10-20 minutes.
- Alternate ingredients on skewers, starting and ending with a piece of pepper or onion. Leave a little room at the end of each skewer for grasping.
- Place skewers on grill and brush lightly with a little more olive oil, or drizzle a bit over top. Cook 3-5 minutes each side - the more sides you choose to cook on means less time on each "side". Baste again after each flip.
- Once everything is grilled to doneness, remove from heat and let sit for a couple of minutes. Serve with rice or potatoes and top with cilantro and a drizzle of the sour cream.
