Feta Meatballs and Veggies

  • 1 pound of ground lamb, beef, chicken or turkey
  • 4 tablespoons goat feta, crumbled
  • 1/2 cup green or black olives, pitted and chopped
  • 1/2 cup ?nely chopped fresh parsley
  • 2 tablespoons ?nely chopped onion
  • 2 whole eggs
  • 1 teaspoon italian seasoning
  • 4-6 cups of cooked veggies (asparagus, peppers, zucchini etc...)

  1. In a large bowl, with your hands, combine the ground meat, feta, olives, parsley, onion, eggs and Italian seasoning.

  2. Form around 20 meatballs golf ball in size and place on a baking sheet. Put the oven rack on the highest setting and pace the baking sheet in the oven on broil.

  3. When the meatballs are brown (around 4-6 minutes), flip them over and broil them on the other side until fully cooked.

  4. Serve with veggies of choice.
