Balsamic Pot Roast

Whether as a part of sandwiches or as the meat in a full dinner, you will love this so much that doubling the recipe will become a habit, to ensure leftovers! The recipe is based around a beef roast, but pork or any red meat will benefit from the flavour.

Ingredients:
  • ~2.5 lb pot roast
  • ¼ cup all-purpose flour
  • 2 Tbsp vegetable oil
  • 1 cup beef broth
  • ½ cup balsamic vinegar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • ½ tsp red pepper flakes
  • 4 cloves garlic, chopped

Directions:

  1. Pat meat dry and dredge in flour. Heat oil in saucepan and brown meat all over, for about 7 minutes total. Remove from heat and place in slow cooker.

  2. Mix all other ingredients together with juices from saucepan and pour over beef.

  3. Cook on low for 6 hours. Once done, move roast to serving dish. Break apart lightly with two forks and then ladle about ¼ to ½ cup of gravy over roast beef. Remaining gravy can be frozen for later use.
