Classic Turkey Brine

This is a simple brining recipe that will result in tender, juicy turkey meat with plenty of flavour throughout.

Ingredients:
- 6 liters water
- 10 oz kosher salt
- 8 oz brown sugar
- 2 tablespoons peppercorns
- 8 bay leaves
- 4 tablespoons juniper berries
- 4 cups ice

Directions:
1. Combine the water, salt, sugar, peppercorns, bay leaves and juniper berries in a large stockpot, and bring to a boil.
2. Stir until the solids have dissolved, then remove from heat. Feel free to add in some extra spices here if you wish!
3. Add ice and cool the brine to room temperature (Make sure to refrigerate until thoroughly chilled –if you start brining your turkeys in warm brine, they might begin to cook at an unsafe temperature, so the brine must be cold)
4. While your brine is cooling, wash and prep your turkey - turkeys should definitely be thawed completely before brining.
5. Place cooled brine and turkey into a large cooler and soak turkey overnight, or for about 12 hours.
6. Turn turkey once during the brining process. Once brining is complete, pat dry and season turkey as desired!
