Gingery Chicken Soup

A great recipe for cold evenings. Substitute tofu for chicken to make this vegetarian, and add any vegetables you like in place of the bok choy.

Ingredients:
- 4 cups chicken bone broth
- 1 tbsp. sesame oil
- 2 tbsp. fresh ginger, peeled and finely chopped
- 6 cloves garlic, sliced
- 2 cups chicken breast, diced
- 2 tbsp. soy sauce
- 4 cups bok choy, thinly sliced
- 1 cups green onions, thinly sliced

Directions:
- Heat sesame oil over medium-low heat. Saute ginger and garlic.
- Add chicken, chicken stock, soy sauce, and bok choy. Bring to a boil over high heat.
- Reduce heat and simmer for five minutes. Stir in green onions. Serve.
