Gingery Chicken Soup

A great recipe for cold evenings. Substitute tofu for chicken to make this vegetarian, and add any vegetables you like in place of the bok choy.

Ingredients:
  • 4 cups chicken bone broth
  • 1 tbsp. sesame oil
  • 2 tbsp. fresh ginger, peeled and finely chopped
  • 6 cloves garlic, sliced
  • 2 cups chicken breast, diced
  • 2 tbsp. soy sauce
  • 4 cups bok choy, thinly sliced
  • 1 cups green onions, thinly sliced

Directions:

  1. Heat sesame oil over medium-low heat. Saute ginger and garlic.

  2. Add chicken, chicken stock, soy sauce, and bok choy. Bring to a boil over high heat.

  3. Reduce heat and simmer for five minutes. Stir in green onions. Serve.
