Panko Crusted Ahi Tuna

Ahi tuna is a seafood lover's favourite, especially when quickly seared on the outer edges, leaving the center raw. The crispiness of panko brings that much more crunch to the tuna. Our suggestion of spices here can be easily adapted to meet your menu ideas or taste preferences. A lemony or a spicy aioli is an excellent pair for this, as is Hoisin sauce.

  • 2 Ahi tuna steaks or 1 fillet
  • 1 cup Panko bread crumbs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes
  • 3-5 Tbsp olive oil

  1. Mix together the bread crumbs, salt, pepper, garlic powder, and red pepper flakes. Spread out on a plate.

  2. Laying it flat on your cutting board, slice your Ahi into strips as wide as the steak is high - aiming for long strips that are about 1 to 1 1/2 inches square when looking at the end.

  3. Roll the Ahi strips in the bread crumb mixture, coating all sides, including ends.

  4. Heat a heavy skillet to high heat. Add in 2 Tbsp of the olive oil and let it start to sizzle. Put in half of the Ahi, turning about every 30 seconds to sear all 4 sides. Repeat with the second half.

  5. Remove from heat, slice into bite-size portions and serve with your favourite aioli or dipping sauce.
