Tuna Melt on Rice Crackers or English Muffins

This is a long-time staff favourite. There are varying opinions around the office about what other toppings are best with this - or if naked is best (a popular term) - so we're leaving the choice up to you. The top suggestions from us are tomatoes, sweet peppers, bacon, or any kind of roasted veggies.

Ingredients:
- 1 can tuna
- 3-4 tbsp. mayonnaise
- 1 oz. diced onion (white, red, green or shallot)
- 1 oz. chopped celery
- 1 tbsp. minced parsley and/or cilantro
- 1-2 tsp. fresh ground black pepper
- 1 tsp. lemon juice or red wine vinegar
- 1 tiny pinch of salt
- 1 generous pinch of paprika
- (optional) a squeeze of mustard or hot sauce
- (optional) 1/2 tbsp. horseradish
- rice crackers
- English muffins

Directions:
- Drain tuna.
- Mix all ingredients except cheese in a bowl.
- Top the cut sides of the rice crackers with the tuna mixture. Top with optional veggies and cheese.
- Place on a rack over an oven-safe tray, under cold broiler (toaster ovens are great for this), set to 450 degrees. Turn it on and let it go until cheese bubbles just the way you want it to; usually about 10 minutes. Leave it to cool a couple of minutes before eating.
