Strawberry & Feta Salad

A lively mixture of lettuce, strawberries, almonds, and feta is tossed with a tangy oil and vinegar dressing! The tomatoes add body to the dish - remember that tomatoes stored in the fridge start to get a bitter edge to them, so leave them out. If desired, try swapping the tomatoes with melon pieces or citrus fruit.

Ingredients:
- 1/4 cup Balsamic Vinegar
- 1/8 cup Agave Nectar
- Fresh ground black pepper
- Salt
- 1/3 cup Olive Oil
- 2 cups of strawberries, halved
- 2 roma or 1 large tomato, diced
- 4 handfuls of lettuce
- 1/2 cup Feta
- (optional) 1/4 cup pecans, pistachios, cashews or almonds, chopped

Directions:
- In a small bowl, whisk together vinegar, salt, pepper and agave. Slowly drizzle oil and whisk until well blended. Set aside.
- In a large bowl, toss together remaining ingredients. Sprinkle extra feta cheese and strawberries on top.
- Whisk together dressing right before serving and toss with salad. Garnish with nuts (optional).
