Ingredients:
  • 1/2 cup butter
  • 1 egg
  • 1/2 cup xylitol
  • 1/4 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 cup all purpose flour
  • 1 1/4 cup oatmeal
  • 1/2 cup dark chocolate chunks (optional)

Directions:

  1. On low heat, melt butter and xylitol. Stir constantly, making sure that xylitol is dissolved.

  2. Let the mixture cool. Add egg, cinnamon, salt, and baking soda. Mix well.

  3. Mix in flour and oats. Add chocolate chunks, if using. Do not over stir.

  4. Let rest in the fridge for at least an hour.

  5. Preheat oven to 350 F. Scoop out spoonfuls of dough onto a nonstick pan. Bake for 8-10 minutes.
