You won't miss the gluten at all in these delightful almond flour cookies.

Ingredients:
  • 1/2 cup unsalted butter
  • 6 tbsp. brown sugar
  • 1 tsp. vanilla extract
  • 1 cup gluten free oat flour
  • 1 cup almond meal/flour
  • 1/2 tsp. ground cinnamon
  • 2 tbsp. brown sugar

Directions:

  1. Preheat oven to 300 F. Grease cookie sheet.

  2. Blend butter, maple sugar, and vanilla extract together with a mixer or a fork until creamy. Add flours and mix until dough sticks together.

  3. Form dough into 1 1/2 inch balls. Place on prepared cookie sheet and bake for 30-35 minutes. Coat with cinnamon and maple sugar while still warm. Allow to cool and enjoy.
