This recipe takes some time, but most of it is slow cooking in the oven. Save it for a lazy Saturday, or pop it in the crock pot overnight on a weekday. When you wake up, it will be done.

Ingredients:
- 4 oz. sliced bacon, cut into pieces
- 1 onion, chopped
- salt and pepper
- 1 lb. dried navy beans, soaked overnight and drained (or use canned and reduce water and cooking time)
- 1/2 cup molasses
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1 tbsp. dry mustard
- 2 tbsp. apple cider vinegar

Directions:
- Heat oven to 300 F.
- Cook bacon in a Dutch oven until almost crisp. Add onion and a generous helping of salt and pepper.
- When onion is cooked, add beans, molasses, ketchup, sugar, mustard, and five cups of water to the pot. Bring to a boil.
- Cover the pot and place in the oven. Bake until liquid is reduced by half, about 2 1/2 hours. Uncover and bake, stirring once, until cooking liquid is thickened, about 1 1/4 hours more. Stir in vinegar and serve.
