White Chocolate Cinnamon Ganache

A delicious ganache for filling between layers of cakes or - our favourite - between two of your favourite cookes.

  • 1 cup of White chocolate
  • 1/4 cup of Whipping cream
  • 2 tsp of Corn syrup OR simple syrup
  • 2 tbsp of Butter
  • 1 to 2 tsp of Cinnamon, to taste

  1. Combine chocolate, cream and corn syrup in a bowl.

  2. Heat over a bain-marie (double broiler).

  3. Let sit until chocolate begins to melt and then begin to mix (if mixture is about body temperature the fat will separate, so wait until the chocolate is considerably melted).

  4. Once all the chocolate is melted and you have an emulsion remove from heat and mix in the butter.

  5. Let cool in fridge until hard (overnight would be best)
