Blueberry Mojito Pops

Ingredients:
  • 2 tbsp. white rum
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/3 cup freshly squeezed lime juice
  • 1/4 cup fresh mint (loose, not packed)
  • 1/2 cup sparkling water
  • 1/4 cup blueberries (small ones work best)
  • 1/2 lime, thinly sliced

Directions:

  1. In a small saucepan over medium heat, bring the water and sugar to a boil until all the sugar is dissolved. Set aside and allow to cool.

  2. Blend the sugar mixture, lime juice, rum and mint together in a blender for a few seconds until the mint is chopped into relatively small flecks but isn't totally pureed. Pulse in the blender if needed.

  3. Place a slice of lime (if using) in each of the Zoku molds, then insert the handles and drop a few blueberries into each. Pour the mixture into the molds; when they're frozen, unmold and repeat the process, keeping your finished pops in the freezer while you make the next batch.
