Rice Pilaf

Ingredients:
  • 1 c. Bhutan red rice
  • 2 tbsp. butter
  • 1/4 c. spring onions or 2 1/2 tbsp. shallots
  • 1 c. carrots (diced)
  • 1 c. shitakee mushrooms (diced)
  • 1 bay leaf
  • 1 sprig of thyme
  • 1 1/2 c. chicken or veggie stock
  • 1 pinch salt and pepper

Directions:

1. Rinse rice in cold water and let dry.
2. In sauce pan melt butter over medium heat.
3. Saute onions or shallots until translucent (no color).
4. Add "burnoise" of carrots, mushrooms and rice.
5. Saute (again no color) for a few minutes, then add chicken stock or water.
6. Add a bay leaf and a sprig of thyme.
7. Cover and put in oven at 450 for 12-15 minutes or until liquid is gone
