Sweet Potato Ground Beef Tacos

Ingredients:
  • 1 lb ground beef
  • 4-6 corn or flour tortillas
  • 1/4 c. feta or cotija cheese
  • juice of 1 lime
  • 1 med. yam
  • 2 tsp. olive oil
  • 2 tsp. chile powder
  • 2 avocados diced
  • 2 green onions
  • salt & pepper
  • 1 small roasted jalapeno, diced
  • 1/2 cup greek yogurt
  • 1/2 c. clove garlic

Directions:

1. Preheat oven to 400F.
2. Cube yams and toss them with half of the olive oil, chili powder, salt, and pepper, and spread in one layer on a baking sheet. Bake for 20 minutes.
3. In a small food processor, blend together the yogurt, avocados, garlic, and lime juice.
4. Fry ground beef until brown, not pink anymore. Add chili powder, olive oil, salt, and pepper.
5. Assemble tacos with roasted sweet potatoes, diced avocado, ground beef, scallions, and cheese. Serve with avocado yogurt sauce.
