  • 3 ripe avocados
  • 1 lemon squeeze
  • 1 tbsp vanilla extract
  • 2 cup coconut milk
  • 1/2 cup honey
  • 1/2 cup pistachio

1. Mix the avocado, lemon juice, and vanilla extract in a food processor until blended and smooth.
2. Add the coconut milk and honey and continue blending until well mixed.
3. Pour into your ice cream maker and churn according to the machine's instructions.
