Ingredients:
- 1 whole chicken
- 16 C water
- 3/4 C salt
- 3-4 bay leaves
- 1 onion, quartered
- 1 clove garlic, smashed

Directions:
- Take one whole chicken, place into a large pot and cover with water
- Add the salt, bay leaves, onion, garlic, and stir. Leave to brine in the refrigerator for 6-8 hours. Remove the chicken and dry completely
- Preheat oven to 350F. Place chicken on roasting pan and roast uncovered for approximately 1 hour, or a minimum of 165F internal temperature
- Remove chicken and let rest for 10-15 minutes
