Ingredients:
  • 1 whole chicken
  • 16 C water
  • 3/4 C salt
  • 3-4 bay leaves
  • 1 onion, quartered
  • 1 clove garlic, smashed

Directions:

  1. Take one whole chicken, place into a large pot and cover with water


  2. Add the salt, bay leaves, onion, garlic, and stir. Leave to brine in the refrigerator for 6-8 hours. Remove the chicken and dry completely


  3. Preheat oven to 350F. Place chicken on roasting pan and roast uncovered for approximately 1 hour, or a minimum of 165F internal temperature


  4. Remove chicken and let rest for 10-15 minutes
