Mills Sablefish Recipe - Sablefish and Miso Marinade

Directions:
- Make a soft paste by combining miso, mirin, and sake. Rub on the fish, cover, and let sit in the fridge for 2-24 hours.
- Preheat oven to 450F. Heat an ovenproof saute pan over medium high heat. Add a touch of vegetable oil and sear the sablefish, skin down, for 2 minutes, or browned around the edges.
- Transfer the pan to the oven and cook for 5-7 minutes, or until the fish is opaque in the centre
- Remove pan from oven and place fish on plate.
