Ingredients:
- 1 package buckwheat soba noodles
- 4 scallions thinly sliced (about 1 cup)
- 1/4 C vegetable oil

Directions:
- Boil water and add soba noodles, stirring until fully immersed. Bring water back to the boil then reduce temperature to simmer and cooked for approx 5-8 minutes or al dente (you will cook them again, so you don't want them to get mushy)
- While noodles are simmering, prepare a large bowl of cold water. When noodles are done, drain them and put them into the cold water. Wash noodles in cold water and then drain them and set aside.
- In a large saucepan, heat the oil over medium heat. When hot, add the scallions and saute them for 30 seconds. Add the cooked soba noodles and stir until warmed through.
- Remove the pan from the heat and place the noodles in a large bowl.
