Ingredients:
- 1 tsp coconut oil
- 1/3 tsp powdered cloves
- 4 medium apples
- 1 lb red cabbage, cut into four sections & cored
- 1 medium onion, chopped
- 1 large garlic clove, finely chopped
- 1/3 tsp powdered cinnamon
- 1/3 whole nutmeg, freshly grated
- 1 heaped tbsp soft brown sugar
- 1½ tbsp red wine vinegar
- salt to taste

Directions:
1)Shred the cabbage finely into ¼ " shreds, discarding any tough stalky bits.
2)Heat the oil in a frying pan over a medium heat. Add the onion and cook for 2-3 minutes then add the garlic and cook 2-3 minutes more.
3)Turn heat up to high and add the cabbage. Stir constantly with a wooden spoon for about 3-4 minutes so it comes into contact with the hot pan on all sides.
4)Stir in the spices and apples, diced
5)Reduce heat and cook for 30-40minutes minutes, stirring occasionally. Check to see if it is tender.
6)Increase the heat again and add the vinegar and sugar. Give it a few stirs and serve.
