Butternut Squash Gratin - Holiday Dinner

Ingredients:
  • 1 tbsp. coconut oil
  • 3/4 c. coconut milk
  • 1 clove garlic, cut in half
  • 1/4 c. dried bread crumbs
  • 2 tsp. chopped fresh parsley
  • 1 butternut squash, peeled, seeded & cut into 2 inch matchsticks
  • 1/2 tsp. thyme
  • 3 tbsp. green onions, minced
  • Pinch nutmeg

Directions:

1)Heat oven to 375ºF. Rub a baking dish with garlic, then grease with oil. Set aside.
2)Melt oil over medium heat. Add bread crumbs and stir until crumbs have separated—2-3 minutes. Transfer to medium bowl and stir in parsley.
3)In a large bowl, combine squash, thyme and green onions. Transfer to baking dish.
4)In a small sauce pan, heat milk and nutmeg to a boil. Reduce heat and simmer for 5 minutes. Pour over squash. Bake for 20 minutes, remove and stir. Return to oven and bake until cream thickens—about 10 minutes.
5)Remove from oven, preheat broiler, sprinkle bread crumbs over baking dish and broil until deep-golden brown—about 2 minutes.
