Green Goddess Soup

  • 2 tbsp coconut oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 inch piece ginger, peeled and minced
  • 3 cups bone broth
  • 1 medium sweet potato, cubed (about 3 cups)
  • 2 small or 1 large head of broccoli, chopped (about 1 cup)
  • 1 bunch kale, chopped
  • 1 lemon, 1/2 zested and juice reserved
  • 1/2 tsp sea salt
  • 1 bunch cilantro
  • Avocado for garnish

1. In a stock pot, melt coconut oil over medium heat. Once hot, add onions and cook for 5-7 minutes or until the onions have become translucent and slightly brown. Add garlic and ginger, cooking for another minute.
2. Pour bone broth into the pot, adding the sweet potato chunks and broccoli as well. Bring everything to a boil, then cover lid, reducing heat to low, and simmer for 10-15 minutes.
3. When vegetables are tender, turn off heat and add kale, half of the cilantro, lemon zest and juice, and salt.
4. Transfer soup to be pureed in the blender in batches. Careful not to burn yourself at this stage!
5. Serve warm, with cilantro and avocado garnish.
