Wild about Rice

  • 1 cup wild rice
  • 3 tbsp. coconut oil
  • 4 large tomatoes
  • Sea Salt
  • Ground Pepper
  • 3 garlic cloves, minced
  • 1 400ml can of black beans (or chick peas)
  • 4 cup kale leaves, finely chopped

1)Cook the rice according to the instruction on the package.
2)As it is cooking, add the coconut oil to a large frying pan (if you have a non-stick pan, you can use half the oil). Heat coconut oil on low. Add the garlic and fry it until it turns golden.
3)Add the kale, tomatoes and beans and cook for 3 to 5 minutes, stirring occasionally. Be careful not to overcook the kale, which should remain crunchy.
4)When the rice is cooked, fluff it with a fork. Combine the kale mixture with the rice and mix it together well and ad salt and pepper to taste. Serve right away.
