Simple Potato Pancakes - Holiday Dinner

Ingredients:
  • coconut oil for the pan
  • 4-5 potatoes, peeled
  • 1 small onion
  • 1/4 c flour
  • 1 egg, beaten
  • 1/4 tsp baking powder
  • 1/2 tsp fine sea salt

Directions:

1)Wash and peel the potatoes. Shred the potatoes and onion.
2)Add the flour, egg, baking powder, and salt.
3)Heat a heavy bottomed skillet and add a bit of oil. Drop about 1/4 cup of the mixture in a mound and cook until golden brown and crispy on one side. Flip over, flatten, and finish cooking.
4)Repeat until all are cooked, placing finished ones on a warm platter.
