Curried Broccoli Soup

Ingredients:
  • 2 tsp coconut oil
  • 1 tsp lemon juice
  • ground pepper to taste
  • 1 c chopped onion
  • 1 tsp minced garlic
  • 1 tsp curry paste
  • 3 c vegetable broth
  • 4 c chopped broccoli
  • 1 c peeled chopped potatoes
  • salt to taste

Directions:

1)Heat oil in frying pan over medium heat. Add onions, garlic and curry paste. Cover and cook for 3 minutes. Transfer to large saucepan, stir in remaining ingredients.
2)Bring to a boil, cover and simmer until veggies are tender (approx. 25 min.)
3)Puree in batches and return to sauce pan.
4)Add lemon juice, salt and pepper.
