Asparagus with Orange Butter Sauce

Ingredients:
- 1/3 c minced shallots
- 1 lb asparagus
- 1 tsp dijon mustard
- 2/3 c fresh orange juice
- 1/4 c of butter
- 4 orange wedges

Directions:
1)Clean asparagus and remove bottom inch of spears (otherwise leaving spears whole), then boil or steam.
2)Melt 1 tbsp. of butter in a wide frying pan over medium heat. Add shallots, stirring until soft.
3)Add mustard and orange juice. Bring to a boil over high heat and boil until reduced to 1/2 cup. Remove from heat. Add remaining butter and stir until blended.
4)Pour sauce over cooked asparagus and garnish with orange wedges.
