Red Lentil and Red Pepper Penne

  • 1 onion
  • 1 clove of garlic
  • 1 tbsp olive oil
  • 150 g red lentils
  • 1 vegetable boullion cube
  • 1/2 red pepper
  • 1 tbsp tomato paste
  • cayenne pepper
  • paprika
  • finley chopped parsley or cilantro
  • 200g penne noodles

Chop the onion, mince the garlic and saute in oil. Add the red lentils and sweat breifly. Pour in 1 1/2 c water abd bring to a boil. Add the boullion cube and stir until dissolved. Cook lentils for about 20 minutes Finely dice the red pepper and add to the lentil mixture. Stir in tomato paste and season with spices. Add parsley.

While the lentils are cooking, cook the pasta in a large pot of boiling water.

Pour sauce on pasta and enjoy!
