Picnic Pasta Salad

  • 2 c rotini
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced
  • 1 carrot, grated
  • 1 field cucumber, diced
  • 1 red onion, slivered
  • 1 pt cherry tomatoes, halved
  • 1/2 feta cheese, crumbled

1)Bring large pot of water to a rapid boil. Add pasta and cook no longer than 10 minutes, until it is al dente. Drain and rinse under cold water right away until room temperature. Transfer to a large, 7-cup plastic storage container or baking bowl.
2)While pasta is cooking, whisk olive oil, vinegar, and garlic together in a measuring cup. Drizzle over pasta and toss to mix through.
3)Add veggies and cheese and toss. Keep cold until ready to serve.
