Ingredients:
- 3 vine ripe tomatoes, cut into chunks
- 1 red onion, thinly sliced
- 2 mini cucumbers, diced
- 1 cup kalamata olives
- 1/2 cup feta (traditionally in slices)
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1/3 cup fresh parsley chopped
- 1 tsp oregano thinly chopped
