Greek Lemon Roasted Potatoes

Ingredients:
  • 4 large russet or 8 medium roasting potatoes
  • 1/2 cup olive oil
  • 3 lemons freshly squeezed (just the juice)
  • 1 tbsp dried oregano
  • 1 tbsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 cup water
  • 2 cloves garlic minced

Directions:

1. Heat oven to 500F. Chop up potatoes into big chunks and place on a roasting pan.

2. Add all other ingredients except oregano together and coat the potatoes.

3. Bake for about 50 minutes, turning potatoes halfway to ensure even roasting and a golden appearance.

4. Garnish with oregano and serve.
