Napa Cabbage Slaw with Peas

- 1 tbsp lemon juice
- 1/2 lb husked, fresh English peas
- 1 Napa cabbage, shredded
- 2 med. carrots, grated
- 1 med. red pepper, slivered
- 1 red onion, minced
- 1 tbsp apple cider vinegar
- 3 tbsp olive oil
1)In a large pot of rapidly boiling water, blanch peas for about 15 seconds. Transfer immediately into a bowl of ice and cold water.
2)Drain well, pat dry and toss with remaining ingredients.
