Garlicky Potatoes & Yams Mash - Holiday Dinner

Ingredients:
- 3 tbsp. coconut oil
- 1/2 cup coconut milk
- 1/2 tsp. Dried rosemary
- 8 garlic cloves, unpeeled
- 1.5 lbs. Potatoes, cut into 2
- 1.5 lbs. Yams, cut into 2

Directions:
1)Heat the oven to 350 degrees. Put the garlic in a small ovenware bowl and put 2 tablespoons of the oil over top. Bake it for 25 minutes until it is quite soft.
2)Let the garlic cool and then peel the garlic. Keep the oil for later.
3)Grease a square baking dish with a bit of oil. Boil the potatoes and yams in a large pot for about 25 minutes. Drain them then put them back in the pot.
4)Add the milk, rosemary and roasted garlic to the potato/yam mixture.
5)Mash them until smooth and fluffy. Add extra milk if necessary.
6)Spoon the potato/yam mixture into the dish.
7)Bake for about 45 minutes.
