Ingredients:
- Filling:
- 1 lb fresh apricots, cut in 1/2-inch wedges
- 7 tbsp sugar
- 1 tbsp flour
- 1 1/2 tsp lemon juice
- 1/4 tsp vanilla
- Topping:
- 3/4 c flour
- 1/3 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 3 tsp sugar
- 2 tsp cold butter, cut into chunks
- 1/2 c well-shaken buttermilk

Directions:
Toss all filling ingredients together in a 9-inch glass baking dish and let stand until juicy, about 30 min.
Preheat oven to 400°F.
Sift together flour, baking powder and soda, salt, and 1 teaspoon sugar in a bowl. Blend in butter until mixture looks like coarse meal. Stir in buttermilk with a fork just until combined.
Drop rounded tablespoons of dough over filling, leaving spaces in between to allow topping to expand. Sprinkle with remaining 2 teaspoons sugar.
Bake cobbler until fruit is tender about 30 minutes. Serve warm.
