The (Slightly) Healthier Pizzadilla

Ingredients:
- 2 organic corn tortillas
- 1 1/2 tablespoons organic marinara sauce
- 1/3 cup grated cheese
- 1/2 cup spinach
- 1/2 cup chopped pepper
- Ground chicken
- 1 tablespoon extra virgin olive oil
- Pinch of salt and pepper for seasoning

Directions:
- Put a medium sized non-stick skillet (one slightly larger than your tortilla shell, but not too much larger) over medium heat
- Season chicken with salt and pepper (or season with your favorite spice)
- Add extra virgin olive oil to the skillet and cook chicken with chopped peppers
- Remove from pan once done cooking
- Add 1 tortilla to the pan and spread the marinara sauce over it
- Sprinkle cheese evenly over the tortilla
- Once the cheese begins melting, add spinach and the cooked chicken and peppers and top with the second tortilla
- Once the cheese is melted enough, flip the pizzadilla to slightly brown the top side
- Plate, cut, and serve with salsa or ranch dip!*
*If you're packing it for lunch, let the slices cool to room temperature before stacking in containers and closing the lid.
