Zucchini Latke

Kids love these delicious latkes for breakfast or any time of the day! It's the perfect way to use up the summer's zucchini bounty!

Ingredients:
- coconut oil
- flour
- ground pepper to taste
- 4 c grated zucchini
- 4 eggs
- 3 cloves garlic, minced
- 1 green pepper, diced
- 2 green onions, minced
- Dash of sea salt
- shredded cheese

Directions:
1)Press grated zucchini in colander by weighing it down with a stack of plates or a plate and a bag of flour to squeeze out excess juice. Let sit 15 minutes.
2)Beat eggs and mix with veggies, cheese, green onion and garlic. If it seems too moist and won't hold together, add up to 2 tbsp. flour.
3)Heat oil in a cast iron skillet on medium high.
4)Spoon approximately 1/3 c batter to form a latke. Fry on both sides until golden.
5)Serve with a sauce of your choice!
