Steel Cut Oats Congee

Oats take the place of rice in this Asian-inspired dish. It's a perfect comfort food, especially if you're feeling a little under the weather.

  • 3 cups broth
  • 1/2 cup steel-cut oats
  • 1/2 cup minced mushrooms
  • 1/4 cup minced carrot
  • 1 tbsp grated ginger
  • 1 tsp soy sauce
  • 1/2 tsp rice wine vinegar
  • salt to taste
  • chili flakes to taste

  1. In a medium pot over high heat, bring broth, oats, mushrooms, and carrot to a boil

  2. Turn the heat down to medium and add the ginger, soy sauce, and vinegar

  3. Cook for 20 mintues or so until the oats are cooked and the congee thickens

  4. Just before serving add salt and chili flakes to taste
