Classic Caesar Salad

  • 4 c cubed crusty bread
  • 2 tbsp coconut oil
  • ground pepper
  • 2 tbsp fresh lemon juice
  • Salt to taste
  • 1/4 cup grated Parmesan cheese
  • 1 egg yolk
  • 1 tbsp red wine vinegar
  • 2 cloves garlic,minced
  • 1 tbsp. Tamari
  • 1/2 cup olive oil
  • 1/4 c Parmesan cheese

1)Toss bread cubes with coconut oil, salt and pepper.
2)Spread on baking sheet; bake in 400 degree oven for 14 min.
3)Sprinkle with cheese; and blend to coat bread. Let cool.
4)Dressing: Whisk together egg yolk, lemon juice and vinegar. Blend egg mixture, garlic, tamari and pepper until blended. Slowly pour in oil. Mix in Parmesan cheese.
5)In large bowl, toss with romaine lettuce. Add croutons; toss again.
