Jackfruit Banh Mi

Ingredients:
  • 400g jackfruit
  • 1 baguette
  • ΒΌ cup soy sauce
  • Juice of 1 Lime
  • 1 table spoon of maple syrup
  • 2 teaspoons of grated ginger
  • 1 clove of garlic, minced
  • 1 green onions, chopped
  • 2 carrots, cut into matchsticks
  • cilantro, to taste

Directions:


  1. In a mixing bowl pull jackfruit apart with fork until its at a bite sized consistency. Place all marinade items in a blender and blend on high until smooth. Pour it over the jackfruit and stir until its' covered. Then let it sit for at least an hour or up to three to let the jackfruit soak in the flavour.


  2. While the jackfruit is marinading you can take the time to prep any ingredients you want to add. Cilantro, carrots and cucumber work well but feel free to add whatever you like.


  3. Once the jackfruit is ready to go warm up a large skillet with a table spoon of grape seed oil. Use a slotted spoon to drain some of marinade while adding it to the pan. Saute until the jackfruit is slightly browned and some of the marinade has evaporated roughly 5-10 minutes.


  4. Then you're good to build your sandwich as you'd like! Serve at warm or at room temperature. Leftovers will last for a few days and are quite versatile for other dishes.
