Turmeric Lemon Cream Bars

  • Yellow Layer
  • 6 tbsp coconut flour
  • 1/4 cup coconut butter (warmed for easier blending)
  • Juice and zest of 2 lemons (room temperature)
  • 1/4 maple syrup
  • 1 tsp vanilla extract
  • 1/2 ground turmeric
  • White Layer
  • 1/4 cup coconut butter (warmed for easier blending)
  • 1/2 plant-based milk of your choice
  • Juice of one lemon (room temperature)
  • 1/4 cup maple syrup

  1. Add all the base ingredients to a food processor and process until combined. Transfer this mix to a lined loaf pan (8"x4") or similar sized container. Press down into an even layer with a smooth top, and place the pan into the freezer.

  2. Clean out the food processor and process all the white layer ingredients. Pour this over the yellow layer in the pan and allow it to sit for 1 minute. Add any toppings or decoration (if using) and place in the freezer for at least 5 hours or overnight to set.

  3. Once set, trim off the uneven edges and slice into bars - they are ready to eat after being out of the freezer for about 10 minutes. Keep leftovers in the freezer until ready to eat.
