Peanut Butter Oatmeal Cookies

  • 1 c. crunchy peanut butter
  • 1/2 c. butter or margerine
  • 1 c. brown sugar, packed
  • 1/2 c. granulated sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 eggs
  • 2 tsp. vanilla extract
  • 4 c. rolled oats
  • 1 c. chocolate chips (optional)

Preheat oven to 350ºF.

1. In a large mixing bowl beat peanut butter and butter with an electric mixer on medium to high speed for 30 seconds.

2. Add brown sugar, granulated sugar, baking powder, and baking soda; beat until combined. Beat in eggs and vanilla until combined. Stir in oats. Stir in chocolate chips.

3. Use an ice cream scoop to drop cookies 4 inches apart onto an ungreased cookie sheet.

4. Bake for about 15 minutes or until edges are lightly browned.

5. Cool 5 minutes on the cookie sheet. Transfer cookies to wire racks; cool.

Yields approximately 2 dozen cookies.
