Spiced Zucchini Latkes

Ingredients:
- 2/3 c flour
- coconut oil
- ground pepper
- 2 med potatoes
- 2 med zucchini
- 1 small onion
- 1 large green pepper
- 2 eggs, slightly beaten
- 1/4 tsp salt

Directions:
1)Peel and grate potatoes. Wrap in a clean, dry tea towel and squeeze dry.
2)Place about 2 c of potato into a large bowl.
3)Grate zucchini and squeeze dry in towel. Should yield approx. 1 c.
4)Add to potato. Grate onion into mix. Add chili pepper. Stir in egg, meal or flour and seasoning.
5)Heat oil in a wide skillet over medium heat.
6)Line a platter with paper towel (or clean, dry tea towel.) When skillet is hot, drop batter by heaping tablespoon into skillet. 7)Flatten each mound with a fork. Don’t crowd pan. Fry on each side until golden brown, and serve.
