Goddess Corn Cakes

Ingredients:
  • 2 c. corn
  • 1 c buttermilk
  • 2 tsp butter
  • 1/4 c minced red pepper
  • 1/4 c chopped green onions
  • 1/2 c cornmeal
  • 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/2 tsp salt

Directions:

1)Melt butter in frying pan, saute red pepper and corn for about 10 min. on medium heat. Remove from heat, stir in green onions and set aside.
2)In a bowl combine cornmeal, flour, baking powder, soda, and salt. Make a well in the center once it's mixed.
3)In another bowl, beat together the eggs and buttermilk till frothy. Pour this and the corn mixture (from frying pan) into the well of dry ingredients. Stir briefly, just until everything is wet.
4)Lightly grease a frying pan with oil and fry the corncakes like pancakes: 2 minutes on each side or until golden brown.
