Apricot-Cherry Crisp

Ingredients:
  • 2 cups cherries, halved and pitted
  • 3 cups apricots, chopped and pitted
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1/2 cup Earth Balance Buttery Spread
  • 1 tsp. cinnamon
  • Pinch of all-spice (optional)

Directions:

Preheat oven at 350 degrees. Mix together all of the dry ingredients and chop in the butter or margarine. Chop up all of the fruit and toss in a 8-inch casserole dish. Spread the crumbly mixture on top of the fruit and bake for 30 minutes.

Try varying the proportion and kind of fruit for a different taste. Try it with fresh or frozen berries and apples.
