Zucchini Salad

  • 1 med onion, sliced and separated into rings
  • 3 tbsp. lemon juice
  • 3 med zucchini, thinly sliced
  • 1/2 c. olive oil
  • 1/4 tsp. oregano
  • 3/4 tsp. salt
  • Chopped parsley

1)Cover the prepared onions and zucchini with boiling water and let sit for 5 min.
2)Drain. Combine the remaining ingredients, then pour over the zucchini and onion and toss.
3)Top with parsley and marinate for several hours before serving.
