Presto Pasta Pesto

  • You will need:
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 1/2 teaspoon red pepper flakes
  • 4 cups broccoli florets
  • 1 cup grated Parmesan cheese
  • 3/4 cup pesto
  • 2 c. basil leaves
  • 2 tbsp pine nuts or walnuts
  • 4 tbsp grated Parmesan
  • 2-3 garlic cloves, minced
  • 1/4 c. olive oil
  • salt and pepper

1. Cook pasta until just tender but firm. Drain noodles, reserving 1 c cooking liquid.

2. Heat oil in large pot over med heat. Add onion, garlic and red pepper and sauté until onion is translucent, about 5 min.

3. Add broccoli and 1/4 c reserved pasta cooking liquid. Cover pot and cook until broccoli about 4 min. Add pasta, 1/2 c parmesan cheese and pesto.

4. Toss until pasta is evenly coated, adding remaining reserved liquid by tbsp if mixture is dry. Season to taste with salt and pepper. Transfer mixture to large bowl. Sprinkle with remaining 1/2 c parmesan cheese.

5.PESTO - Put all of the ingredients into a blender or food processor and mix thoroughly. Adjust the amount of olive oil as needed.
