Ingredients:
- Enough fresh tortellini for 4
- 1 1/2 c grated mozzarella
- Tomato Sauce:
- 1 tbsp butter
- 2 garlic cloves, minced
- 1/4 c. chopped onion
- 1-443mL can tomato sauce
- Mushroom Parmesan Sauce:
- 2 tbsp butter
- 2 c sliced fresh mushrooms
- 1 pkg pasta herbs (1/2 oz), chopped
- 1/4 c chopped green onion
- 2 tbsp flour
- 2 c milk
- 1/3 c grated parmesan
- salt & pepper

Directions:
1. Tomato Sauce:
Melt butter and saute garlic and onion until tender. Add tomato sauce and bring to boil. Reduce heat, cover and simmer 10 min.
2. Cook tortellini according to pck instructions.
3. Mushroom Sauce:
Melt butter and saute mushrooms, green onion, and herbs until tender. Sprinkle with flour and stir in milk gradually. Cook and stir over med heat until it thickens (like mushroom soup). Remove from heat, stir in parmesan and salt and pepper to tast. Add mixture to drained tortellini.
4. To Serve:
Spread the tomato sauce over bottom of large shallow casserole. Spoon mushroom mixture on top, leaving a red border. Sprinkle with mozzarella and place under broiler until cheese is melted and golden.
